This is from my good friend Caron...I thought it was incredibly written and I wanted to share this with you!
As I take a full day in honor of giving thanks, I am grateful for you. Since connection is a high priority for me, I appreciate our connection.
In appreciation, I am sending you the recipe that has been a recent hit in our house. This would be a tasty addition to your day!
Delicious Apple Bread
3 cups flour, I use whole wheat
1 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
3 large eggs
1 cup vegetable oil
2 cups granulated sugar
1 teaspoon vanilla extract
3 cups diced apples
1 cup chopped walnuts
1. Preheat oven to 325*F. Line two 9 x 5 x 3-inch loaf pans with wax paper; set aside.
2. In medium bowl combine flour, cinnamon, baking soda and salt; set aside.
3. In mixing bowl beat the eggs, oil, sugar and vanilla together, mixing well. Stir in flour mixture until just mixed. Mixture is stiff and may seem dry. Fold in apples and walnuts and spoon into prepared loaf pans.
4. Bake for 1 hour and 15 minutes or until tested done when wooden pick inserted in center of loaf comes out clean. Cool 10 minutes in the pans before removing to cool on wire racks.
Wrap tightly to store, if they make it that far! Makes 2 loaves.
